# Chaikhana: the Uzbek tea house

> The neighbourhood tea house — traditionally the heart of Uzbek male social life, still central in every town. Green tea, sofa-like raised platforms, hours of conversation, and hearty food.

A **chaikhana** (literally "tea house" from Persian *chai* + *khana*) is far more than a café. Historically it's where men met to negotiate business, arrange marriages, judge disputes and simply sit for hours. Modern chaikhanas mix that old role with restaurant service.

**Physical layout**:
- **Raised platforms** (**supa**) covered with carpets and cushions, arranged around a central low table. You sit cross-legged or lounge on your side. Shoes off.
- **Central open cauldron** or grill visible from the seating area.
- Usually a small pond, fountain, or plane tree for shade.

**Ritual of tea**:
- **Green tea (kok choy)** is standard. Black tea (qora choy) is also common.
- Tea is served in a **piala** — a small bowl-cup without handle.
- Traditional greeting: the host pours a small amount, swirls it, pours it back into the teapot, and repeats three times. This warms the pot and blends the strength.
- Piala is filled only 1/3 full — this signals respect: "I care so much I keep pouring for you".
- Sweets, dried fruit and nuts sit on the table before food arrives.

**Standard chaikhana menu**:
- **Shurpa** — meat and vegetable soup.
- **Non** — round flatbreads, always fresh.
- **Salads** — tomato-cucumber-onion (achichuk), pickled aubergine.
- **Manti or samsa** — dumplings or savoury pastries.
- **Shashlik** — grilled kebabs.
- **Plov** — usually at lunchtime.

**Etiquette**:
- Break bread with your hands, never a knife.
- Don't turn the piala upside-down when you're done — signal by leaving it right-side up.
- If a local elder pours tea, hold your piala with both hands to receive.
- Women are welcome at modern chaikhanas everywhere. In small villages, some remain male-heavy.
